- 1 lb Ground Sausage
- 1 sweet onion small, chopped
- 2 c shredded cheddar cheese
- 2 c shredded Swiss cheese
- 1 1/2 small curd cottage cheese
- 6 eggs lightly beaten
- 4 c frozen shredded hash browns thawed

Instructions
- In a skillet, cook sausage and onion.
- In a large bowl, combine remaining ingredients. Stir in sausage mixture.
- Transfer to a greased 13x9 baking dish.
- Bake, uncovered, at 350F for 35-45 minutes.
- **This can easily be prepared and stored in the refrigerator the night before, though it may require several minutes additional baking time.
