- 2 tbsp shallots or yellow onions chopped
- 2 tsp vegetable oil or butter
- 1-3 garlic cloves (depending on taste)
- 1 1⁄2 c. long grain white rice rinsed
- 2 1⁄4 c. vegetable broth or 2 1⁄4 cups chicken broth or 2 1⁄4 cups water
- 1 tsp salt
- 3/4 tsp turmeric
- frozen peas (depending on taste)

Instructions
- Heat oil in a medium saucepan on medium-high heat.
- Add the shallots and garlic and cook until they start to brown, around 2-3 minutes.
- Add rice, broth, turmeric, and salt. Add frozen peas (if using). Bring to a boil; this may take a few minutes.
- Reduce heat to medium-low, cover, and simmer 15 minutes.
- Remove from heat and let rest 5 minutes.
- Sprinkle with fresh cilantro for a little extra flavor.
