Spanish Yellow Rice

Ingredients

shallots or yellow onions
chopped

vegetable oil
or butter

(depending on taste)

long grain white rice
rinsed

vegetable broth
or 2 1⁄4 cups chicken broth or 2 1⁄4 cups water

salt

turmeric
frozen peas
(depending on taste)
cilantro
Instructions
Heat oil in a medium saucepan on medium-high heat.
Add the shallots and garlic and cook until they start to brown, around 2-3 minutes.
Add rice, broth, turmeric, and salt. Add frozen peas (if using). Bring to a boil; this may take a few minutes.
Reduce heat to medium-low, cover, and simmer 15 minutes.
Remove from heat and let rest 5 minutes.
Sprinkle with fresh cilantro for a little extra flavor.
