Ingredients
Cake:
3
eggs
2/3
c
Pumpkin Puree
(not pie filling)
1
c
sugar
1
tsp
baking soda
1/2
tsp
cinnamon
3/4
c
flour
Filling:
8
oz
cream cheese
Room Temp
1
c
powdered sugar
2
tbsp
margarine
3/4
tsp
vanilla
Instructions
Preheat oven to 375. Cover a cookie sheet in foil and grease the foil.
Mix together eggs, pumpkin, sugar, soda, cinnamon. then fold in flour.
Spread onto cookie sheet & then bake for 10 min.
Invert onto a damp towel and roll up to cool.
Beat filling ingredients until fully mixed, unroll cake & spread filling onto it. then re-roll tightly.
Refrigerate until firm and then slice to serve.
